I'd Call It "Zucchini At Its Best" or "The Most Delicious Zucchini Bread You Ever Had"!

This bread couldn't be more special. The combination of fresh, ground zucchini, banana, and whole-grain flour form a perfect harmony and the probably most nutrient-dense dessert bread you ever had. I love to serve it with a creamy spread such as (vegan) cream cheese, yoghurt, curd or ricotta and some fresh seasonal fruits.  Just like figs during the summer, oranges make an amazing paring during the colder, European winter months. 

For the perfect texture and flavor, I suggest using one fresh, ripe, and organic zucchini and banana. Moreover, I added nuts in two different forms - one ground up as hazelnut "flour" and one coarsely chopped. Using different textures is a pro tip to create an exciting, flavorful final texture.

World's Best Zucchini Bread
12 SERVINGS PREP TIME : 15 min COOK/REST TIME : 60 min
The probably most satisfying way to sneak more veggies into your diet is by adding them to your desserts. This super delicious zucchini-banana bread is loaded with nutrients, free from refined sugar, super crunchy and so delicious. 
INGREDIENTS PREPARATION
INGREDIENTS :
    • ZUCCHINI BREAD :
    • -  
      60g Coconut flower sugar
    • -  
      1 mashed banana (approx. 120g mashed weight)
    • -  
      45ml olive oil
    • -  
      10g ground flax seed + 15g chia seeds
    • -  
      150g regular white flour + 100g wholegrain flour
    • -  
      1 Tsp cinnamon
    • -  
      Dash of salt
    • -  
      1 Tbsp apple cider vinegar
    • -  
      155ml oat milk
    • -  
      6g baking powder + 2g baking soda
    • -  
      50g hazelnuts (coarsely chopped)
    • -  
      300g zucchini
    • TOPPINGS :
    • -  
      Optional: Nut butter and sesame seeds as bread crust
    • -  
      Curd or (vegan) cream cheese
    • -  
      Fresh fruits such as figs or oranges in the winter season
    • -  
      Fresh pistachios
PREPARATION :
  1. Pre-heat oven at 180*C (top-bottom heat).
  2. Prepare the flax-chia egg: Combine ground flax with chia and a few Tbsp of the milk. Let the mix sit for 5-10min while you prepare the remaining dough.
  3. Prepare the zucchini: Grate the zucchini, then press out the excess water. You can do this by hand or by using a nut milk bag or paper towel.
  4. Combine all remaining ingredients in a large bowl, then add the flax egg and mix well. The dough is very soft and can be combined with a wooden spoon. Not electronic mixer needed.
  5. Transfer the mix into a bread baking pan and, if you want, decorate with nut butter and sesame seeds. Then, place the pan into the oven.
  6. Bake for 45min, then check the cake. If your bread is already darkening, cover it with an extra sheet of baking paper and continue to bake for another 15min.
  7. Take the bread out of the oven, let it cool off completely. Then, enjoy!
