It's Prickly Pear Season And You Definitely Shouldn't Miss This Recipe

Hey veggie friends. Today I have a super easy, veggie-loaded classic with a twist to share with you. We all know and love our avocado toast but have you ever tried the classic with a few prickly pear slices, tahini and crunchy seeds on top? I promise, you won't regret giving it a shot. So let's dive right in.

Prickly Pear-Avocado Sandwich

This prickly pear-avocado sandwich is a super delicious, nutrient-loaded breakfast alternative to the classic avocado toast you know so well. It is super easy to prep and perfect to serve in late super - the prickly pear peak season. 
INGREDIENTS PREPARATION
INGREDIENTS :
    • AVO-CACTUS FRUIT SANDWICH :
    • -  
      1 slice of wholegrain bread
    • -  
      1/2 ripe avocado
    • -  
      Dash of salt
    • -  
      Ground pepper
    • -  
      1 prickly pear (cactus fruit)
    • -  
      2-3 walnuts
    • -  
      1 Tsp Tahini
    • -  
      1 squeeze of lime
    • -  
      2 Tbsp Bakd&Raw supersede mix (see link above)
PREPARATION :
  1. Cut your wholegrain slice of bread.
  2. Top it with fresh avocado. Then, add a squeeze of lime, pepper and a dash of salt.
  3. Finish with your peeled prickly pear, one Tsp of Tahini and the most delicious supersed mix.
  4. Enjoy.
