During my time in Mexico, I learned from a few wonderful chefs the basics of the Mexican cuisine. Guacamole is one of them and, honestly, it is so easy to make. The only thing you need to pay attention to, is high-quality ingredients as the flavor greatly differs based on your input. So if you always wanted to know how the Mexicans make Guacamole themselves, here is your "how-to" guide.
As I said before, Mexican Guac is super easy to make. And all ingredients are actually available in German supermarkets. So, no need to online shop this time. :) And for the ultimate Mexican flavor, pay attention to the following three rules and I promise, you'll end up with a super delicious "classic Mexican Guacamole".
High-quality ingredients are key: Just like in every "Vegan/Raw" dish, the quality of the ingredients is key. Obviously, as there is no cooking involved and no sugar or fat added which can "gloss" or "shine" over the veggie flavor. Therefore, I highly recommend to purchase flavorful tomatoes, high-quality avocados (which need to be ripe when you prep them) and delicious limes.
Never "cut down on limes": Limes are a staple food in the Mexican cuisine. Tacos, Salsas and Guac would not be the same without limes. Therefore, add as much as possible. Limes don't only add the ultimate freshness to the dish but also enhance the flavor of the others making the Guacamole mix a "dream-combo".
Green Jalapeños are needed for an authentic flavor: Another essential for an authentic Mexican Guacamole are green Jalapeños. Even if you don't like spicy food, add a few Jalapeños to your Guac. If you cut them in tiny pieces you will barely notice the "spice" as green Jalapeños perfectly aren't that spicy and they perfectly immerse into the mix.
I love Guacamole. To be honest with you, sometimes I just spoon it out of the preparation bowl. But if I'm acting more civilized, I love to eat Guac on top of tortillas, as a refreshing barbecue dip or on top of a wholegrain slice of bread for dinner (as I did for example when I took those photos). Here, I added a few spinach leaves as a base, topped those with loads of Guacamole , sprinkled Microgreens on top and finished things of with a few extra splashes of lime and Jalapeño slices.
