Pre-heat your oven to 180*C.
Clean and cut the kohlrabi into bite-size "fries". Then, add them to a bowl, alongside with the spices (except of the salt) . Feel free to get creative here. I personally love my veggies spicy, therefore I also added Chili Flakes and Harissa. The exact amounts I added were: 1/2 Tsp Cili Flakes, 1/2 Tsp Harissa Seasoning, 1/2 Tsp Cumin + Pepper
Combine kohlrabi and spices so that all fries are nicely coated with the spice-oil mix. Then, add everything onto a baking tray.
Bake for about 10min. Then check and flip the fries for an even brown crust. Continue baking for another 10-15 minutes (or until golden-brown).
For the "salsa", combine all ingredients in a bowl and stir well. I like to use a hand mixer here as it helps me to integrate the minced garlic into the salsa mix.
The same rules apply to the salsa: Season according to taste. I used my super spicy homemade mustard and therefore only used 1/2 Tsp. However, feel free to add more.
Cool your fries for a few seconds, add the desired amount of salt and top them with fresh herbs. I personally love the combination with cilantro.
