This is my favorite base recipe for Sweet Potatoes. In my opinion, Sweet Potatoes are just a perfect addition to any colorful Buddha Bowl. But they are also delicious by themselves or on a plate filled with other roasted veggies.
OVEN-ROASTED SWEET POTATO CUBES (BASE RECIPE) :
600g Sweet Potato
30ml Olive Oil
1 Garlic Clove (minced)
Salt (according to taste)
Pepper (according to taste)
1/2 Tsp Ground Corinader
Chili Flakes (optional)
Feta cheese (if desired)
Preheat oven at 180*C
Wash your sweet potato, peel it, then cut it into small chunks
Take the wedges and mix them with the olive oil, garlic and the remaining spices in a bowl
Place seasoned sweet potato cubes on a baking dish and bake for 25-30min (or until soft and golden-brown)
Top the sweet potatoes with Black sesame and the chopped almonds, add additional salt and pepper if needed and serve with your favorite dip. I love the eat my sweet potato wedges with any kind of dip, such as a Cashew Mustard Dip or Hummus
