My Favorite Summer Sunshine Breakfast Bowl Recipes

In this post, I share my favorite plant-loaded summer bowl recipes - perfect for a long breakfast, an in-between snack or as an healthy alternative to your little (n)ice cream break in the afternoon.


1. Lime & Zesty Yoghurt-Granola Crunch Summer Bowl

Ingredients/ Toppings:

- Favorite Yoghurt (ex. Green Yoghurt, Soy or Coconut Yoghurt)

- Fresh Apricots

- Fresh Strawberries

- Fresh Raspberries

- Physalis

- Golden Flax Seeds

- Granola of choice (I used chickpea Granola)

- Fresh Lime Zest


Combine all ingredients in a serving bowl and decorate according to taste.


2. Healthy & Satisfying Iced Blueberry Nice Cream Bowl 

Ingredients

- 2 Frozen Bananas

- 150g Frozen Blueberries

- 1 Tsp Almond Butter

-250 ml Soy Milk 

Toppings

- Flax Seeds

- Sesame Seeds

- Fresh Strawberries

- Freeze-Dried Raspberries

- Granola of choice (I used chickpea Granola)


Combine all base ingredients in your food processor and mix until creamy. Then, transfer into a serving bowl and decorate according to taste


3. Super Seedy Berry Swirl Yoghurt Bowl

4. Simple & Delicious Berry Dream Granola Bowl

Ingredients: Blueberries, Blackberries, Strawberries topped with curd (alternative coconut cream) & your favorite granola

5. Omega-3 Loaded Chia-Raspberry Almond Swirl Bowl

Ingredients:

- 60g Chia Seeds

- 400ml Almond Milk 

- Dash of fresh ground Vanilla

- 1 ripe banana

Toppings:

- White Almond Butter

- Fresh Strawberries & Raspberries

- Raspberry Salsa (made from frozen Raspberries)

- Flax Seeds

- Sprouted Buckwheat


Combine the chia seeds, vanilla and the plant milk in a bowl, stir well and place into the fridge overnight. Take it out the next morning, add plant milk if necessary, fold in the mashed banana and transfer onto a serving place. Then, top according to taste. 

6. Super Crunchy Chocolate-Banana Dream Bowl 

Ingredients:

- 2 Frozen Bananas

- 1 handful chopped Pecans

- 1 Tbsp Raw Cacao Powder

- 1 Tsp White Almond Butter

- 90g Oat Milk

- 1 Tsp Ground Flax Seeds

- Dash of fresh ground Vanilla

Toppings:

- Sesame Seeds

- Chia Seeds

- Banana Chips

- White Almond Butter 

- Blackberries


Combine all base ingredients in your food processor and mix until creamy. Then, transfer into a serving bowl and decorate according to taste

7. Wholesome & Nutritious Iced Strawberry Carrot Cake Bowl

Ingredients:

- 2 Medium-Sized Carrots (ground)

- 2 Frozen Bananas

- 35g Oats

- 70g Almond Milk

- 2 Tsp Almond Butter

- Dash of Cinnamon

Toppings:

- Fresh Strawberries

- Carrot

- Coconut Flakes

- Walnuts

- Flax Seeds


Combine all base ingredients in your food processor and mix until creamy. Then, transfer into a serving bowl and decorate according to taste

I love summer. From late spring until early fall, there are so many fruits in season that it almost becomes a challenge to decide which ones to eat. In this post, I share my absolute favorite summer breakfast bowl - all loaded with plant nutrients, full of flavor and beyond satisfying!

INGREDIENTS :
    • SUPER SEEDY BERRY SWIRL YOGHURT BOWL :

      Blueberry Salsa (made from heated frozen organic blueberries)

      Granola of choice
    • -  
      Fresh Blueberries / Raspberries

      Chia Seeds

      Pumpkin Seeds

      Flax Seeds

      Sesame Seeds

      Walnuts

      Goji Berries
PREPARATION :
  1. Place your favorite yoghurt in a serving bowl
  2. Top bowl with all of your favorite nuts & seeds, blueberry salsa, fresh fruits & granola
