Asparagus & Strawberries - The Best Seasonal Combination Out There

Have you ever tried green asparagus and strawberries together? If not, it's about time to give this deliciously seasonal combo a try. From mid May- mid June strawberries and green asparagus are freshly available at your nearby farmer's market as well as in the German supermarkets.

Plus, and I think I mention this in almost every post, aside from the incredible flavor, there's nothing better we can do for our health than eating seasonal produce as those veggies and fruits are just bursting with vitamins, minerals and secondary plant compounds which fuel our bodies.

Healthy Asparagus-Strawberry Salad With Extra Nutritious Alfalfa Crunch
In the mood for a super seasonal spring dish? - This asparagus-strawberry salad based on loads of leafy greens and topped with alfalfa crunch is the perfect light side dish for the season. 
    • -  
      400g Asparagus
    • -  
      250g fresh strawberries
    • -  
      Handful of wild leafy greens (spinach, arugula, summer greens)
    • TOPPINGS :
    • -  
      Feta cheese (sub with Vegan Feta cheese alternative)
    • -  
      Sprouted Alfalfa (sub with other crunchy nuts)
    • -  
      50 ml Extra Virgin Olive Oil
    • -  
      1 Tbsp Balsamic Vinegar
    • -  
      1 Tbsp Apple Cider Vinegar
    • -  
      1/2 Tsp Dijon Mustard
    • -  
      1/2 Tsp Raw Honey
    • -  
      1 Tsp Almond Butter
    • -  
      Salt & Pepper according to taste
  1. Wash the strawberries, asparagus and leafy salad greens thoroughly.
  2. Meanwhile, cut off the "woody part of the asparagus". Then take a veggie peeler and peel the green asparagus spears. (If you don't feel like making thin asparagus spaghetti, you can also cut the spears into small chunks). Next, cut the strawberries into bite-sized portions.
  3. Add oil to your frying pan and roast the asparagus over medium heat for a few minutes. Season with salt and pepper.
  4. Combine the roasted asparagus with the strawberries and the other leafy greens and top everything with your dressing. Finish your salad with sprouted alfalfa and feta cheese.
  5. To make it a complete meal, add a source of protein, such as quinoa and tofu.
