
I tried tons of brownie recipes over the past years but none of them tasted like this one. Of course, many tasted very good but the downside was, they always contained a lot of refined sugar, processed flower and milky chocolate. This vegan and gluten-free brownie recipe is pure heaven in contrast. The sweet-potato-date-mix creates just the perfect moist a brownie needs, the flower is replaced by nutrient-rich almonds and the sweetness comes naturally from the sweet potatoes and a tiny bit of maple syrup. I promise you, once you have tried this healthy brownie version, you will never want to go back to the brownies you used to prepare. By the way, if you let the brownie cool in the fridge over night, they even get better I personally think. (Hence, they are also perfect to prep beforehand :))
All you need to prepare these delicious vegan, gluten-free brownies is a a pot to cook the potatoes, a food processor or hand-held mixer to mix the potatoes and the dates, and a few delicious toppings to style your cake at the end. In this recipe I used puffed amaranth and blueberries (see image below). Yet, feel free to try anything you can find in your kitchen. Chocolate goes with (almost) everything I think!
