In the mood for an easy and fresh summer salad, full of vibrating colors? Then this is your recipe. The deliciously refreshing lentil pasta salad with fresh radicchio, green peas, a scoop of yoghurt & a roasted tiger nut crunch topping is all you need to energize yourself on a summer weekday. 

Superfood Salad Shopping Tips

For all the fresh produce in this recipe, my number one recommendation is - visit your local farmer's market. I bet you will find freshly harvested peas and radicchio there. Plus, you do something for the local community and the environment if you shop offline.

For the specialty items, such as lentil pasta & whole tiger nuts, you can do the following: First, check at the farmer's market for Tiger nuts. A crazy farmer may even sell them as fresh plants.* If you're unsuccessful there, then check in your nearby supermarket or online.

Easy Summer Lentil Pasta with Radicchio, Peas & Tiger Nut

This lentil pasta salad with fresh radicchio, peas & roasted tiger nuts recipe is super easy to prep, loaded with plant nutrients & vibrating colors & super delicious. Plus, perfect to enjoy cold as well. 
INGREDIENTS PREPARATION
INGREDIENTS :
    • LENTIL PASTA SALAD :
    • -  
      Lentil pasta (according to taste & hunger)
    • -  
      Scoop of yoghurt (soy, greek, coconut)
    • -  
      Handful fresh radicchio leaves
    • -  
      200g Fresh cooked Peas
    • -  
      Handful of roasted tiger nuts
    • BALSAMIC VINAIGRETTE :
    • -  
      5 Tbsp Extra Virgin Olive Oil
    • -  
      1 Tbsp Apple Cider Vinegar
    • -  
      2 Tbsp Balsamic Vinegar
    • -  
      Freshly crushed black pepper
    • -  
      Sea salt according to taste
    • -  
      1/2 Tsp Dijon Mustard
    • -  
      1/2 Tsp Honey
PREPARATION :
  1. Cook lentil pasta according to package instructions. Then, rinse and cool for a few minutes before you add the remaining ingredients.
  2. Cook peas and roast tiger nuts in the pan and set them aside.
  3. Prepare the balsamic vinaigrette.
  4. Place all ingredients into a serving bowl, drizzle the vinaigrette over the mix and finish with a scoop of yoghurt.
  5. Enjoy.
