A perfectly light dish to welcome Spring & nourish your body with loads of vitamins, minerals, fibre, plant protein and healthy fats.  The mild sweetness of raw carrots and pear is balanced with pure hemp creaminess, crunchy cashews and super refreshing herbs. I really couldn't recommend the recipe more if you're in the mood for something light, healthy, beautiful and delicious. 

What You Need To Make This Deliciously Healthy Raw Pasta Dish

Prio A and the most important item you need for a raw pasta party is a spiralizer. I actually have two at home. One very simple and classic one that definitely works if you just want to slice up a zucchini. Though, if you want to work with larger veggies or fruits, the mini gadget isn't the best. Here I recommend a spiralizer like this one.

Prio B are high quality organic ingredients. Those are always important but when you go raw, freshness becomes even more important. I love to buy my nuts and seeds from 1001Frucht.de or Amazon. My evaluation criteria - all ingredients of a raw food dish MUST be fresh and tasty by themselves.

Raw Pasta with Hemp-Zucchini-Miso Salsa

INGREDIENTS PREPARATION
INGREDIENTS :
    • RAW PASTA :
    • -  
      1 Pear
    • -  
      2 Carrots
    • -  
      1 Zucchini
    • HEMP-ZUCCHINI SALSA :
    • -  
      180g Zucchini (one medium Zucchini)
    • -  
      80g Hemp Seeds
    • -  
      2g Garlic (Minced)
    • -  
      100ml Water
    • -  
      Juice from 1 lime
    • -  
      1/2 Lemon Gras (finely chopped)
    • -  
      4 Tbsp Apple Cider Vinegar
    • -  
      2 Tbsp Miso (light brown)
    • -  
      Small piece fresh ginger (finely chopped)
    • TOPPINGS :
    • -  
      Fresh Parsley
    • -  
      Fresh Mint
    • -  
      Roasted Cashews
    • -  
      Orange Zest
PREPARATION :
  1. Clean your veggies and the pear thoroughly. Then, take your spiralizer (veggie cutter) and cut everything into "plant pasta".
  2. For the hemp-zucchini salsa, combine all ingredients in your food processor and mix until smooth and creamy. (This may take a few minutes depending on your blender). In case you don't have a food processor or a blender a hand mixer should work as well.
  3. Meanwhile roast the cashews in your pan (without any oil).
  4. Toss the freshly made salsa over the plant noodle mix and serve.
  5. Serving suggestions: To add extra nutrients, a fresh flavor and to give it an extra beautiful look, I suggest to add fish parsley and mint alongside with some orange zest.
