
Waffles are one of my favorite "soul food dishes". They are simply perfect for a cozy Sunday brunch, "Girls get-together" or "sudden friend's visit" as waffles are super quickly prepped by themselves.
In this recipe I took the classic chocolate waffle recipe, removed any refined sugar source, used whole grain spelt flour mixed with coconut flour, minimized the fat and added a pinch of adaptogenic Cordyceps powder and organic raw cacao. To complete the dish, I complemented the waffle with homemade Kefir (my new, favorite gut health food), sugar-free homemade currant-chia jam and crunchy Granola. I promise, I am not lying if I say that this combination tastes "heavenly"!
Let's talk about this recipe composition. The "hero ingredient" is the flavorful chocolate waffle made of "raw Cacao" and "ground Cordyceps powder". Added are "the classics" - wholegrain flour, plant milk, coconut oil, natural sweeteners (Banana and a pinch of Maple Syrup) and and egg. Therefore, the recipe isn't vegan (I tried a vegan and a non-vegan version but since the non-vegan version turned out way better - I went for the added egg recipe this time.)
Very important, like always, are the ingredients you add to the mix. A low-quality ingredient will definitely influence the flavor of the composition as we want to add as little sugar and fat as possible. I used this raw organic cacao powder (or this) I purchased on Amazon. For the Cordyceps powder I used the Organic Inner Elmt Cordyceps powder mix. Alternatively you can use 100% pure (organic) Cordyceps powder (alternative) from a company you trust.
What else: Now, you only need a waffle maker - that's it! I personally prefer the large Waffle makers over the small, heart-shaped ones as the waffle is thicker and therefore more similar to a cake. But they all work perfectly. Use whatever you have at hand. :)
No you don't. The recipe works perfectly without adaptogenic Cordyceps powder. BUT..as you know me - I love to experiment with new nutritious ingredients. The earthy tasting Cordyceps powder gives the waffle dough a delicious flavor and you add nutrients (which hopefully partially survive during the baking process).
Cordyceps is an absolute unique adaptogenic mushroom that, in order to grow, infects the silkworm and uses its body as a host. In traditional medicines, such as the Traditional Chinese Medicine (TCM), Cordyceps is used to stimulate the body's energy production, support liver functions, defy aging - amongst many other things.

As mentioned above, feel free to sub the adaptogenic mushroom latte mix for raw Cordyceps powder or additional cacao powder (if you don't have access to this Latte Mix or pure Cordyceps powder). But if you have, definitely try and add your adaptogens, also in the 100% pure state. I truly believe in adding additional nutrients whenever possible.
