Let's Talk Broccoli

If you're into broccoli, you will love this recipe, promise! I recommend serving it as a delicious and balanced veggie side dish or appetizer. What makes the dish very special - well aside from the super flavor - is the balance in itself. Thanks to the tofu in our creamy green base and the nutritious seeds on top, we don't only serve fibrous carbohydrates and healthy fats here, but also a fair amount of protein. 

I hope you enjoy! PS: If you don't like cliantro aka coriander, swap it out for parsley. It will work its magic in a very similar way. :)

Steamed Broccoli with Coriander-Tofu Salsa

This broccoli recipe is a super healthy, nutritious, and delicious appetizer to serve your friends or family. It is super easy to prep, loaded with plant nutrients and full of fresh plant flavors. 
INGREDIENTS PREPARATION
INGREDIENTS :
    • STEAMED BROCCOLI :
    • -  
      1 whole organic broccoli
    • -  
      Water
    • -  
      Dash of salt
    • CORIANDER-TOFU SALSA :
    • -  
      20g fresh coriander
    • -  
      60g organic feta (or vegan feta alternative)
    • -  
      50ml plant milk
    • -  
      10g olive oil
    • -  
      50g unseasoned tofu
    • -  
      2 Tsp lime juice
    • -  
      Light brown miso (optional for extra flavor)
    • -  
      Salt & Pepper according to taste
    • TOPPINGS :
    • -  
      Toasted almond slivers
    • -  
      Bakd&Raw Superseed Mix (Recipe link see above)
PREPARATION :
  1. Steam your broccoli until it has the perfect crunch (approx. 10-15 min in boiling salted water). I love to use a simple steamer I place into my pot to preserve the nutrients.
  2. Coriander-Tofu Salsa: Combine all ingredients and mix until smooth. Use a hand mixer or a simple blender. Season according to taste.
  3. Top the dish with the Bakd&Raw supersede mix (recipe link above) and/or toasted almond slivers.
