Homemade Granola - Super Chunky, Super Easy & Super Healthy 

Have you ever tried to make your own Granola? If not, I promise you, you'll want to make it every week soon! It has such an incredible flavor, is super healthy and "unprocessed" (you decided what goes inside and process it yourself) and it's even super easy to make at home. All you need is a few nuts and seeds (feel free to experiment with your favorite seeds), nut butter, dates and a little bit of coconut oil and maple syrup. That's basically it. 

How To Create The Perfect Granola Flavor

There are three golden rules to follow to end up with a perfect, flavorful Granola that's flavor is incomparable to the supermarket version - I promise. 

1. Use high-quality ingredients

I highly recommend you to go with organic high-quality ingredients. You will taste the difference and you do your body a favor at the same time. 

2. Combine Dates & Nut Butter separately and use it as a coating

The secret of this recipe is the nut butter-date mix which is prepared separately and then used as a nut and seed coating. This will ensure your Granola turns out super chunky without using too much Maple syrup. 

3. Do not save with Spices and add a pinch of salt

I love to use a lot of cinnamon in the recipe as cinnamon is not only healthy - if you use Ceylon cinnamon - but also adds mild sweetness and a delicious flavor to the mix. Feel free to experiment with the amount you use. Another recommendation is using a bit of salt. Salt creates an amazing balance to the nut-seed mix. 

What You Can Do With Homemade Granola

Options to use Granola are endless in my opinion. If you enjoy a bowl of morning porridge, I bet you already know that they make the perfect topping. I typically combine my Granola with yoghurt (and lately also Kefir), add seasonal fruits and finish it off with a drizzle of additional nut butter. I am so in love with this combo. My Go-To Granola Ingredients

When it comes to Granola, I love to say "The sky is your limit!" Don't stick 100% to my recipe below. Instead use it as a base for a one baking tin batch and get creative with the nuts, seeds and fruits you enjoy the most and which works best in your local ecosystem. I know for example that some ingredients are much easier accessible here in Germany, while there may be others I didn't even list you have access to. So just give it a try and don't feel intimidated by my long ingredient list.

Naturally Sweet Super Chunk Granola
Holy Granoli - this is my new favorite Granola - 100% sure! Thanks to the creamy date and nut butter mix, the Granola turns out super crunchy and - in contrast to my other Super Seed Granola recipe - it is full of chunks. It is naturally sweetened with dates and a tiny bit of optional maple syrup and loaded with healthy nutrient-rich nuts, seeds and pseudo grains.

      30g Hazelnut Butter
    • -  
      140g Dates
    • -  
      60ml Water
    • -  
      260g Oats
    • -  
      20ml Maple Syrup
    • -  
      50g Almonds (chopped)
    • -  
      40g Coconut Oil (melted)
    • -  
      4g Sea Salt
    • -  
      Pinch of fresh ground Vanilla
    • -  
      1 Tsp Ceylon Cinnamon
    • -  
      100g Buckwheat
    • -  
      30g Chia Seeds
    • -  
      35g Psyllium Husk
    • -  
      50g Sunflower Seeds
    • -  
      Optional: Additive-Free dried fruit such as Barberries, Cranberries or similar
  1. Preheat the oven at 160*C. Take the Hazelnut Butter, dates and the water and mix it with a hand mixer or high-powered blender until creamy.
  2. In a separate bowl, combine all remaining ingredients - except of the dried fruits. Those are added after the baking process
  3. Add the Nut-Butter-Date Cream and stir until everything is well combined and the seeds, nuts and oats are nicely covered with nut butter and dates.
  4. Place mix onto a baking tin covered with baking paper. It you want, you can press the granola onto the baking tin. In this way you end up with super nice chunks later on.
  5. Place baking tin into the oven and bake at 160*C for 15min. Check after 15min, reduce the heat of your oven to around 100*C and bake for another 10-15 min until golden brown.
  6. Let the Granola cool completely before your break it up into chunks and add the dried fruits/coconut chips (if desired).
  7. Store the granola in a glass jar or similar container and keep it in a dry place; ideally a storage room. Your Granola should stay fresh for at least a month if stored properly.
