Let's Talk About The Ultimate Black Bean Burger

I've been talking about Black Bean Burgers for months now. Legumes and especially Black Beans are not only a nutrient powerhouse, they are also beyond tasty if combined with the right veggies. 100g Black Beans contain around 9.5g protein and 6.8g fibre per 100g cooked. And here we only consider the macronutrient profile. Plus and this is probably the coolest part of all from a culinary stand point, they make the perfect meat replacement for a burger party. 

The ones of you who follow me on Instagram may have seen that I went through several rounds of recipe testing until I ended up with the perfect composition. But here we go. I'm ready to share my ultimate black bean burger recipe with you. Read on and enjoy!  

How To Make The Perfect Black Bean Burger

Making Black Bean Burger Patties is super easy, I promise - especially if you go with pre-cooked black beans. Next, is the decision to make your own burger bun. I personally love homemade Brioche Burger Buns but again, you choose the complexity level. A super easy alternative to homemade burger buns are wholegrain bread rolls aka "Brötchen". That's basically it. Just like tacos, burgers are the most amazing comfort food to go wild, creative and..colorful! The more bold plant colors you add to the composition, the healthier and more delicious it gets. It's a win, win, win ????

The Veggie Burger Essentials & How To Make Your Gut Happy

A Black Bean Burger patty alone won't bring you the ultimate burger sensation. "Faltan los toppings" my Spanglish speaking friends would say. So, what I always recommend is a base cream. In the recipe below, you find the recipe for a Tomato-Miso Butter made from raw Cashew cream. Together with a spicy Kimchi topping, you'll end up in burger heaven, promise. The kimchi you see in the photos was gifted to me by a wonderful friend. (I'll share the recipe in the next few weeks with you.) 

For the ones of you who don't want to make kimchi at home (I admit it's quite a project), check out Complete Organics. Their additive-free probiotic ferments are amazing. My favorite product is their Daikon Kimchi! 

Plus, as you can see in the photos, I added fresh Edamame for extra crunch, leafy greens for bitters, vitamins and minerals, red cabbage & raw Champignons for the ultimate umami flavor balance to this Black Bean Burger creation. Alternatively, you can also add sweet corn and hummus for an extra protein boost and perfect creaminess. 

Last but not least, let's talk about how to prep your black beans for the ultimate veggie black bean burger. I personally love to make my own black beans. Though, it takes at least 12h to soak them, plus around 2 hours to cook them until they are ready to become a burger patty hero ingredient. Hence, for those of you in a hurry, I recommend an additive-free store alternative such as these black beans from HAK which only contain black beans, water and salt.

All Veggie Black Bean Burger With Kimchi Topping
Time to talk about Veggie Burgers. I went through several rounds of testing until I ended up with this personally "perfect" black bean burger patty recipe. The recipe contains parmesan. Though if you're 100% vegan, just sub the parmesan with a few Tbsp nutritional yeast and additional seasoning (soy sauce, salt & pepper). Enjoy! 
    • -  
      450g Black Beans (wet & cooked weight)
    • -  
      1 large clove of garlic
    • -  
      1 1/2 white onions (medium size)
    • -  
      100g King Oyster Mushroom (sautéed with oil, soy sauce, onion & garlic)
    • -  
      60g Oats
    • -  
      1 bread bun (Brötchen; soaked in 3 Tbsp Water & 1 Tbsp Soy Sauce)
    • -  
      Ground Flax Seeds (30g Flax + 40g Water)
    • -  
      60g Sunflower Seeds
    • -  
      35g High quality Parmesan (optional; omit if vegan)
    • -  
      4 Tbsp Tamari (Sub with Soy Sauce)
    • -  
      1/2 Tsp Porcini Mushroom Poweder
    • -  
      1/2 Tsp Coriander spice
    • -  
      35g Fresh Greens (I love to use if available chive & wild garlic)
    • -  
      Salt & Pepper according to taste
    • -  
      Soy Sauce ( 1Tbsp for bread, 3 Tbsp for mushrooms)

      Wild Garlic (optional if in season)

      Edamame (optional)

      Homemade Kimchi (see below or purchased alt. - I recommend Complete Organics)

      50g Tomato Paste (Additive Free 100% Tomato)
    • -  
      70g Cashew-Butter
    • -  
      40ml Almond Milk
    • -  
      2 Tbsp Genmai Miso
  1. For the burger patty: Wash the mushrooms, break or rip the king oyster mushroom apart (as if you would make vegan pulled pork) and sauté the mushroom mix with diced onions and minced garlic in a frying pan. Add cooking oil to fry as well as 3 Tbsp of soy sauce.
  2. Meanwhile combine all remaining ingredients in a large bowl including the finely chopped greens and the grated parmesan. In my first rounds of testing I mixed everything in a food processor. Though for more texture, I personally recommend to combine the mix with your hands and a potato masher. Add the mushroom-onion mix and mix again until everything is well combined.
  3. Form burger patties and bake with a bit of frying oil on high heat for 5-10 min. (depending on heat and patty size)
  4. For the Miso-Tomato butter: Combine all ingredients in a mixing bowl or food processor and mix until creamy.
  5. Serve the burger patties with your favorite bun and toppings. I personally love my burger with Kimchi and a homemade Brioche bun.
