Today's post couldn't be more eggi.. well wait. There aren't any eggs involved.
Hard to believe when you look at the photos above and below but this delicious breakfast recipe is 100% egg-free. And no matter if proud vegan or classic sceptic, I'm almost certain you will love this vegan scrambled egg alternative.
Nutritionally speaking, this dish is crazy. Simply by taking a glimpse at the ingredients we use (loads of tofu and chickpeas), it's obvious that we're talking about a true protein bomb here. Accompanied with fresh garden veggies and leafy greens, such as tomatoes, onion, arugula and mustard greens, the dish turns into a balanced and super flavorful plant creation.
My version of the scramble is inspired by Sebastian Copian - a beyond talented chef and teacher for the vegan cuisine and vegan meat alternatives.
