Tofu Scrambled Eggs: Vegan Or Not, Here Are My Go To Reasons, Why You Should Try A Good Tofu Scramble

Today's post couldn't be more eggi.. well wait. There aren't any eggs involved.

Hard to believe when you look at the photos above and below but this delicious breakfast recipe is 100% egg-free. And no matter if proud vegan or classic sceptic, I'm almost certain you will love this vegan scrambled egg alternative. 

Nutritionally speaking, this dish is crazy. Simply by taking a glimpse at the ingredients we use (loads of tofu and chickpeas), it's obvious that we're talking about a true protein bomb here. Accompanied with fresh garden veggies and leafy greens, such as tomatoes, onion, arugula and mustard greens, the dish turns into a balanced and super flavorful plant creation. 

My version of the scramble is inspired by Sebastian Copian - a beyond talented chef and teacher for the vegan cuisine and vegan meat alternatives.

Protein-Loaded Tofu Scrambled Egg with Chanterelle Mushrooms.
3 SERVINGS PREP TIME : 20 min COOK/REST TIME : 10 min
Tofu scrambled egg is one of the classics in the vegan world. But vegan or not, this protein-loaded dish is something for everyone! Some may consider it a protein bomb, others just as a very delicious, nutrient-rich and flavorful alternative to the traditional Sunday brunch egg hero.
INGREDIENTS PREPARATION
INGREDIENTS :
    • TOFU SCRAMBLED EGG :
    • -  
      100g organic "natural" (additive free) Tofu
    • -  
      100g organic "smoked Tofu"
    • -  
      1/2 medium onion (yellow)
    • -  
      120g chickpeas (1/2 can)
    • -  
      5g Nutritional Yeast
    • -  
      20g light brown Miso
    • -  
      100ml Water
    • -  
      1 Tbsp Tahini
    • -  
      1 Tbsp Soy Sauce
    • -  
      Butter to fry
    • TOPPINGS & BASE :
    • -  
      Wholegrain slice of bread
    • -  
      Homegrown Mustard Microgreens
    • -  
      Butter-roasted chanterelles (Chanterelle, Butter, Salt, Pepper)
    • -  
      Spring Onion
PREPARATION :
  1. Break the tofu apart with your hands or the pulse function of your food processor. Be careful to not over-mix.
  2. Sautee your diced onion in butter, then add the tofu and fry until golden brown. Meanwhile combine all ingredients for the sauce in a mixer and mix until soft. Toss the sauce over the tofu-mix and cook for a few more minutes, or until the vegan egg has your desired texture. I love to reduce the liquid a little bit before I remove it from the heat.
  3. Meanwhile prep the base as well as your toppings. I used seasonal chanterelles which I roasted with a tiny bit of butter, salt and pepper in the pan.
  4. Assemble and enjoy!
