White Asparagus with Red Lentil Pancakes, Wild Garlic Pesto & Roasted Potatoes

A classic recipe with a healthy twist. This White asparagus creation with red lentil pancakes & wild garlic pesto is loaded with plant nutrients, protein, fibre and so delicious. 
INGREDIENTS PREPARATION
INGREDIENTS :
    • LENTIL PANCAKES :
    • -  
      250g Red Lentils (+ 400ml Water)
    • -  
      250ml Water
    • -  
      4g Salt
    • -  
      Dash of Pepper
    • -  
      100g Soy Milk (or other unsweetened milk)
    • -  
      2 Tbsp Lemon Juice
    • -  
      Butter or Oil to fry the pancakes
    • WHITE ASPARAGUS :
    • -  
      1.5kg Asparagus
    • -  
      Dash of honey or sugar
    • -  
      Dash of Salt
    • -  
      1 Dash of Lemon Juice (optional)
    • -  
      2.5l Water
    • -  
      1 Tbsp Butter (or Vegan alternative)
    • SERVING OPTIONS :
    • -  
      Wild Garlic Pesto
    • -  
      Roasted Potatoes
    • -  
      Sauce Bechamel (optional)
    • -  
      Lemon Juice
    • -  
      Walnut Crunch
PREPARATION :
  1. Pancakes: Wash, then soak the lentils in 400ml water for 5h before prepping the pancake batter.
  2. Combine all ingredients in a high-powered blender and mix until smooth.
  3. Fry the pancakes until crispy.
  4. For the White Asparagus: Take the asparagus pears, wash them thoroughly, cut off the dry ends and peel them thoroughly.
  5. Take a large pot and add approx. 2.5l of water, salt, sugar & lemon juice. Add the asparagus peel to the water and cook for 20-30min.
  6. Take the peel out of the water, add the asparagus spears and let them spears simmer for 15-20 min (Time highly varies and is dependent on the white asparagus spear thickness).
  7. Take the asparagus spears out of the water and serve with roasted potatoes, cream and wild garlic pesto.
