White Asparagus Soup with whole grain sesame crunch topping (optionally vegan)
4-5 SERVINGS PREP TIME : 20 min COOK/REST TIME : 30 min
One of my absolute spring favorites - rich, creamy & nutrient-loaded white asparagus soup with a delicious whole grain-sesame crunch topping
INGREDIENTS PREPARATION
INGREDIENTS :
    • WHITE ASPARAGUS SOUP :
    • -  
      500g asparagus (roughly 8 asparagus spears)
    • -  
      Dash of honey or sugar
    • -  
      Dash of salt
    • -  
      2l Water to cook asparagus spears
    • -  
      100ml White Wine (dry)
    • -  
      Dash of pepper & salt
    • -  
      Vegetable stock (amount depends on flavor depth/ type of stock used)
    • -  
      Juice from 1/2 Lemon
    • -  
      35g Butter (or vegan butter alternative)
    • -  
      35g Flour (either wholegrain or white flour)
    • TOPPINGS :
    • -  
      Fried Wholegrain Bread rolled in Sesame Seeds
    • -  
      Chive or Chive Flower
    • -  
      Soy Milk Foam (Sugarfree foamed Soy Milk)
PREPARATION :
  1. Take the asparagus pears, wash them thoroughly, cut off the dry ends, peel them and cut the spears into bite size chunks.
  2. Take a large pot and add approx. 2l of water, salt & honey (or sugar). Then, add the asparagus peel to the water and cook for 20-30min.
  3. Take the peel out of the water, add the asparagus spears and let them spears simmer for 15-20 min (Time highly varies and is dependent on the white asparagus spear thickness).
  4. Meanwhile, take a second pot (large) and heat 35g butter & flour. Note: whole grain flour is more nutritious but influences the color of the soup. So you choose. :)
  5. Stir continuously while you heat the butter-flour mix.
  6. Take the asparagus spears out of the water and set them aside. Slowly add the asparagus water to the butter-flour mix. Low heat and constant staring are key at this point to avoid lumps.
  7. Take 2/3 of your cut asparagus spears and puree them with a hand mixer. Fold the asparagus mix into the soup.
  8. Add the white wine, veggie stock and season according to taste.
  9. Before serving, heat and foam 50ml soy milk and fry a handful of wholegrain bread crumbs.
  10. Enjoy.
