Wholegrain Spelt Pizza With Smoked Red Paprika Hummus

The best Vegan Veggie Pizza you will ever have, I promise! Besides, the Pizza is even great for meal-prepping as you can batch prep the pizza dough as well as the hummus, and serve it whenever you are in Pizza fever. And the best part in my opinion: With the delicious leafy greens on top, the fresh cherry tomatoes, the crunchy roasted sunflower seeds and the creamy walnuts, you got a super colorful complete meal in front of you, rich in fibre, protein, vitamins and minerals. 
INGREDIENTS PREPARATION
INGREDIENTS :
    • WHOLEGRAIN SPELT PIZZA (4 REGULAR OR 2 THICK PIZZAS) :
    • -  
      500g Wholegrain Spelt Flour
    • -  
      21g (1/2 cube) active fresh Yeast (Alternative: Active dry yeast)
    • -  
      1/2 Tsp Honey (Vegan: Rice or Maple Syrup)
    • -  
      250ml Water (lukewarm)
    • -  
      7g Salt
    • -  
      15g Olive Oil
    • SPICY OVEN-ROASTED RED PAPRIKA HUMMUS :
    • -  
      250g Chickpeas (soaked for at least 12h)
    • -  
      Juice from 2 medium lemons
    • -  
      400g Paprika
    • -  
      1 Red Chili (seeds removed)
    • -  
      30g Tahini
    • -  
      150ml Water (ice-cold)
    • -  
      1/2 Tbsp Cumin
    • -  
      7g Garlic (minced)
    • -  
      5g Salt
    • -  
      Pepper according to taste
    • -  
      15g Extra Virgin Olive Oil
PREPARATION :
  1. Mix the active yeast, honey and water in a glass and let the mix sit for about 10 min.
  2. Meanwhile combine all remaining Pizza dough ingredients in a large bowl. Then, add the yeast-water mix and knead the dough. I usually use the dough hooks of my hand mixer for this step.
  3. Once the dough has transformed into a smooth, homogeneous mass, form a ball, place it back into the bowl and cover the bowl with a kitchen towel. Then, let the dough rest for about 30-45min.
  4. Now, preheat the oven to 200*C.
  5. After the 45min, separate the dough into 4 (or 2 for a very thick crust) equal pieces and use your rolling pin to roll them out on a floured surface.
  6. Bake each pizza for about 10 minutes, then cool for a few minutes and prep it to serve.
  7. For the spicy oven-roasted red paprika hummus, follow these steps:
  8. Preheat the oven to 180*C.
  9. Wash your paprikas, cut them into halves and remove the seeds.
  10. Place the paprika halves onto a baking sheet covered with baking paper and bake the paprika halves for 20min.
  11. Remove the paprikas from the oven and let them cool. Then, remove the paprika skin and place the "naked" paprika into your food processor.
  12. Take your soaked and cooked chickpeas (alternative: canned chickpeas) and add them to the naked paprikas.
  13. Add all remaining ingredients and mix for 2-3 min (or until a smooth mass has formed).
